Adeboye

Pilaf rice with veggies and chicken


One of Nigeria’s favourite staple meals is rice.

There are several ways to cook it, jollof and white rice with stew being the most common.

Try this recipe for a little change from the norm.

You can substitute with many different ingredients including eggs, spring onions, shredded chicken or prawns.

INGREDIENTS

3 large chicken breasts

3 cups rice

1 cup carrots,

diced green

beans and carrots (sautéed)

1 cup peas

1 clove garlic,

2 thumb sized ginger, blitzed

1 large onion chopped

pepper,

stock cube and salt to taste

1 tub of butter

1 tbs olive oil

PREPARATION

Marinade chicken overnight in olive oil, black pepper, pinch of salt, ginger and garlic.

After parboiling rice (make sure it is soft leaving minimum time to complete cooking), melt the butter and add the onions, ginger, garlic and diced veggies.

Add pepper and rice with a cup of water. stir and leave to cook till water dries off. you could also cook the rice till ready, sauté the vegetables and mix in with the rice. this method keeps the veggies crunchy. Grill the marinated chicken in the oven.

cut up and serve elegantly.
